Pine Pepper Port

We saw this drink prepared by Joanne Weir’s student on a recent episode of her TV cooking show, “Joanne Weir Gets Fresh.” The drink was described as an upscale alternative to a margarita. Unfortunately, we could not find the recipe on the show’s website. Here is our recollection of the drink.

One tip: keep the lime juice chilled while you are making drinks.


4-6 one-inch cubes of fresh pineapple
Lime juice, freshly squeezed
Agave nectar (diluted 50-50 with water)
Silver tequila
Port or Madeira
Freshly ground black pepper


Place pineapple cubes in a cocktail shaker. Season with black pepper. Muddle the cubes. Add a jigger of lime juice, jigger of the diluted agave, and 1 1/2 jiggers of tequila. Add ice cubes and shake well.

Strain the mixture into serving glass. Season again with a small amount of ground pepper. Ladle a spoonful of port carefully onto the surface of the drink. Serve immediately.
