We live near the places that claim they invented the Ju(i)cy Lucy, a hamburger with cheese in the center of the burger, rather than on top. There are disagreements in how to prepare such a burger, the cheese used, and even how to spell the recipe. We take no sides in the claims, but we do like this recipe from Lidia Bastianich, which is an Italian version of a stuffed hamburger. We like the simplicity and flavor combination.
Low-moisture mozzarella is made by souring fresh mozzarella just a little longer, and then carefully drying it out. It has a longer shelf life, saltier flavor, and better meltability than the fresh stuff. There are many readily available brands nationwide.
