So now it’s time to move on to the menu for Christmas Day. These menu items have a theme: easier, quicker preparation and serving than the recipes on the Christmas Eve menu. We think this is a good idea, because the host and hostess were starting to tire of the kitchen routine by the time Christmas dinner came around.
Here’s the menu:
Fabulous Beef Tenderloin

Garlic Haricots Verts
Fried Cauliflower with Tahini and Pomegranate
Sweet Potato Rolls (see December 2010 recipes)
Let’s start with the beef tenderloin. We looked for a recipe that was easier than many of the stuffed tenderloin selections we found online and in our cookbooks. This one came from allrecipes.com. Here is the link. We caution anyone who uses this recipe that a thermometer in the roast is necessary; we found that our cooking time was more like an hour than 40 minutes.
