Chocolate Satin Pie

This recipe comes from a long-time family friend, Robin Sorenson. We have enjoyed this pie at her home, and she was kind enough to share it with us. Robin says the recipe originated in a recipe from Byerly’s, now part of the Lunds and Byerly’s grocery store chain. Whatever the derivation, this pie is a treasure.

Ingredients:
3 1-oz. squares unsweetened chocolate
¾ cup butter
1 cup plus 1 Tbsp sugar
1½ tsp vanilla
3 eggs (pasteurized)
½ pint whipped cream
chocolate shavings or curls
1 9-inch prepared pie crust

Directions:
Prepare, bake, and cool the pie shell. Melt and cool chocolate. Cream butter and 1 cup of sugar; blend in chocolate and vanilla. Beat in eggs, one at a time: about 5 minutes for each egg. Spoon mixture into baked pie shell. Whip cream with 1 Tbsp sugar until stiff; spread over chocolate. Garnish with chocolate curls/shavings. Refrigerate 4 or more hours before serving.

Serves: 8
