We received a bunch of yellow beets from our local farm source, and we are in the process of harvesting our herbs before the first freeze kills them. The juxtaposition of these two events led us to wonder if there was a recipe that would combine rosemary and beets. Indeed there is! We liked the simplicity and flavor. We would recommend not making the beet wedges too large; otherwise, the surface burns before the interior of the wedges soften from the cooking. Enjoy!
