We paired this side dish with the beet recipe from the previous blog entry. Like many home gardeners this time of year, we have slightly more tomatoes than box elder bugs. We have already made several batches of tomato sauce, and we are snacking on grape tomatoes like chips. So when we found this side dish that pairs tomatoes and mint (both in over abundance this time of year), we cheered. After we tasted the result, we cheered more!
