This cold salad recipe comes from Rachael Ray. And guess what? It doesn’t have any tomatoes in it! Just that was a selling point as we are starting to see tomatoes in our sleep! Seriously, this is a great side dish, and it was even better the second day as a lunch. One trick we again used to reduce the sharpness of the red onions was to soak them for a while in water before adding them to the mix.
Here is the recipe link. We had fresh rosemary available, but you could use dried as well, though you would use 2 teaspoons, not tablespoons, of dried rosemary. If you use the fresh rosemary, we recommend you mince it finely.
