We recently had a farewell party for a friend who is moving to California. In honor of her move to the West Coast, we tried to come up with recipes that we thought would be representative of the Golden State. In our research, we found California Avocado Growers’ website, and this turned out to be a treasure trove for scrumptious summer recipe ideas.
One of the recipes we prepared for the party is this vegetable salad. Here’s the link. Even though the picture is poor quality, a casual reading of the ingredients will hopefully convince you that this recipe is both colorful and flavorful. We thought this recipe was wryly California through-and-through: red, white, and blue; and of course, green, as homage to the environmental movement and the avocado growers! Enjoy!
By the way: the recipe for the vinaigrette is a superb addition to any cook’s repertoire for salad dressings. Make a double batch and try the vinaigrette on a salad of leafy greens.
