Jeff’s Fresh Black Bean Salsa

This side dish went very nicely with the slow-cooked pork stew in the previous post. Jeff, in this case, is Jeff Corwin from Food Network. We liked the method used to soften the bite of the onion in this recipe. Jeff places the diced onion in lime juice and lets the mixture stand for 10-20 minutes before adding the onions to the rest of the ingredients. We thought that step was a good addition to our future salsa preparation.
