Chicken and Waffle Sandwiches

We have served this recipe to guests twice in the last month to rave reviews. This might be a good sandwich for a Superbowl party, too. Reminds us of a supercharged BLT. We found this recipe in the December 2011 issue of Cooking Light. Here is the link to that website.We have moved to cooking bacon in the oven on parchment paper on cookie sheets. Yes, this process takes longer, but we have found the final product worth the effort. Choose a high-quality sliced deli chicken from your local grocery store, unless you can slice the chicken breast as thin as the deli can. Finally, choose your own favorite breakfast waffle; Cooking Light suggests whole-grain waffles, but we happen to know the original version of breakfast waffle tastes great, too!
