Italian Lentil and Broccoli Stew

We started with this recipe from Prevention magazine January 2011 edition, but added shredded beef and substituted some leftover sauted green beans for the broccoli. Once we made it, we realized the stew would have been excellent without the beef. The consistency was more like soup even without adding the extra water called for in the recipe. This made a hearty winter meal with some fresh Italian bread.

The recipe serves 4.
