Chicken Chili

This is a ten-year old recipe from Ina Garten (aka the Barefoot Contessa) that we made recently. You can find the recipe here. As you may know, Ina Garten dislikes cilantro, but we don’t, so that was our first substitution (for the basil) from her recipe.

Secondly, we added dark red kidney beans to the mix. Since we had it on hand, we used a jar of the Williams-Sonoma chili starter.  According to the website, though, this starter is currently unavailable. We also used two cans of fire-roasted canned tomatoes, which we pureed with the chili starter, before adding to the mix. Finally, we shredded the chicken breasts after roasting them.

Next time we plan to try the recipe with black beans.
