This recipe comes from the February 2011 issue of Real Simple magazine. We tried it tonight; the dish is great. The dish uses some ingredients you would not normally think would go together, like quinoa, shiitake mushrooms, and sweet potatoes, but this mix worked well. The link is here.
We used red quinoa, which added color to the presentation, but any kind of quinoa would be fine. We also used half yam, half sweet potato to add extra color.
One of the other nice aspects of this recipe is the fact this recipe is one-fourth whole grains, one-fourth lean protein, and one-half vegetables. That is the precise mix of foods the nutritionists at Real Simple associate with a healthy dinner.
