Aunt Reen’s BLT Cups

We made this appetizer for our recent party, too. This was a big hit with everyone trying to avoid too many sweets. The recipe was recently featured on the Today show, and we have this related website for the recipe directions. The most important steps involve roasting the phyllo cups before filling them (even if it says “fully baked” on the package) and draining all the grease away from the bacon.

We find roasting the bacon on parchment paper in the oven for 15-25 minutes provides an excellent bacon texture and removes most of the grease.

You can also top with a dollop of creme fraiche, chopped chives, lemon zest, caviar, or truffle oil.

Makes 15 servings.
