Chili Powder

Chili powder should not be confused with red (cayenne) pepper. This type of chili powder is a blend of chilies of varying heat. The combination of chilies used here by Julie Sahni in her book Savoring Spices and Herbs, page 54, may not be available everywhere. You can substitute chipotle powder for the pasilla chili powder listed here. Ground bay leaves can be produced by grinding whole leaves.

2 tsp ancho chili powder

2 tsp pasilla chili powder

1 Tbsp Hungarian sweet paprika

1 Tbsp ground red pepper

1 tsp dried oregano

1 tsp ground cumin

1 tsp celery seeds

1 tsp ground bay leaf

Combine all the ingredients and transfer to an airtight container. May be stored in a cool, dry place for up to 3 months.

Makes ¼ cup.
