Oven-Roasted Baby Bliss Potatoes

If you have ever had potato croquettes, we hope you agree with us that the holy grail for potato preparation involves simultaneously having the potatoes crisp on the outside and soft on the inside. This recipe by Elizabeth Karmel, from her book Taming the Fire, is one of two recipes we have found which achieves those two goals. The secret seems to be small potatoes, here, new potatoes.
