This is a fancy appetizer. Maybe almost too fancy. We like it, but the ingredients are not easy to get and they are expensive. This recipe is from Elizabeth Karmel in her book Taming the Fire. The link here is from her presentation on the Today show in 2005. You don’t need the kind of blue cheese in the recipe; we recommend Maytag blue cheese from Iowa. Any kind of fig will do, too. However, you need prosciutto, not thinly sliced ham or Canadian bacon.
