The next series of posts come from a book by chef Elizabeth Karmel, Taming the Flame: Secrets for Hot-and-Quick Grilling and Low-and-Slow BBQ, published in 2005. Elizabeth Karmel is an interesting chef who may not be as well known as she should be. She worked for many years for Weber-Stephens Products, maker of the ubiquitous Weber grills. She has taken as her mission to increase the number of women who do the grilling for the family. She has a website for the express purpose of encouraging women to learn to grill.
