Argentinean Beef Stew

We have made this recipe as a good cold-weather, stick-to your-ribs, main dish. It isn’t hard to find the squash needed for this recipe this time of year. We found this recipe on the Land O’ Lakes website. Apparently, cooks in Argentina substitute pumpkin for squash, but the South American version of pumpkin is more flavorful than the pumpkin we have here.

Serves 4.
