Peas and Carrots Spring Salad

Even though the name suggests this is the wrong time of year for such a salad, we made this recipe with some minor modifications as a compromise. One of us wanted a green vegetable, i.e., peas, and the other wanted a green salad. Thanks to Rachael Ray we were able to do both.

In place of the dressing listed on the website,  though, we used Hendrickson’s Sweet Vinegar and Olive Oil in place of the separate entries for white wine vinegar and olive oil. You can see one of our salad plates in the picture under Accordion Potatoes.
