Hearts of Palm Salad

As the reader will see, we like to try out unusual ingredients, especially spice combinations. This recipe features hearts of palm, which are the inner stems of palm trees. Hearts of palm is a Brazilian favorite. This recipe is served at the Pampas Grill in Los Angeles. The hearts are actually firm white cylinders with the consistency and flavor of artichokes. Most markets will have canned hearts of palm available.

This recipe comes from L.A.’s Original Farmers Market Cookbook, page 175.

1 can (14 oz.) hearts of palm, drained, rinsed, and sliced

1 pint cherry tomatoes

1 cucumber, quartered and sliced in chunks

1 garlic clove minced

2 tbsp finely chopped fresh flat-leaf parsley

Juice of 1 lime

¼ cup extra-virgin olive oil

Kosher salt and freshly ground black pepper

In a large bowl,combine the hearts of palm with the tomatoes, cucumber, garlic and parsley. add the lime juice and oil, and season with salt and pepper to taste. Toss the salad gently with your hands and serve.

Serves 4.
